AUTUMN SIDES

These are two very easy sides to make, because your oven does all the work! The hardest thing would probably be cutting up the vegetables! Preparing your veggies with a drizzle of olive oil, salt and pepper, and then roasting them at 400F gives a nice carmelization to them all. And if your lucky to have a "convection roast" setting on your stove, that's even better.



Roasted Sweet Potatoes and Green Beans, Dried Cranberries, Toasted Hazelnuts, all tossed with Brown Butter and Sage. I saw this combination in a magazine and loved it ever since! I think it was shown with whole pecans, which would be equally delicious!

Brown butter and sage, is simply made by melting some butter on medium heat, tossing in some fresh sage, heat until the white milk solids turn brown, and sage is crispy.




Balsamic Glazed Roasted Acorn Squash



Taking balsamic vinegar and simmering it down until it becomes a dark, sweet rich syrup, and then pouring a generous drizzle over your squash, makes it irresistibly good!!!

Letting the oven do all the work sounds good to me, Marie. I have made squash with balsamic glaze before, but your first recipe is new to me. I can't wait to add cranberries to some roasted vegetables now!

These look AMAZING, Marie! I was just thinking the other day that I need to start focusing on sides a little bit more. I often tend to focus on, say, the pork chops, and then serve them with nothing other than a sad little mound of brown rice or Steamfresh broccoli. My family will love me if I make these one night -- I'll be a rock star! And I'll give you ALL the credit, don't worry.

I love roasted vegetables and these combinations look wonderful!

I just got a new stove recently and I keep forgetting to use the convection setting..LOL!
I roasted some artichokes yesterday and they were to die for! It's amazing how roasting brings out the flavors in different ways.

Sage = fall and it's one of the few herbs that withstands frost....so we can could with it more!

Did you catch Lydia on Sunday? She fried thin slices of squash and then marinated them in a mixture with lots of garlic — oh, yum! ;-)

Another great recipe! The roast vegetables could be a main course with some crispy cubed pancetta added maybe. Or even without - you've already provided some protein with the nuts. The photos are stunning. Great job.

WOW! This sweet potato green bean dish looks absolutely delicious. Do you happen to have the actual recipe? I have been searching for something to make for Thanksgiving which is healthy, pretty, and not so heavy like all the tried and true casseroles that are so over done.
